Good day ladies! I was editing this post last night when I realized this morning that I actually had hit the publish button without the content, haha, silly me! This is a quick recipe I made for lunch yesterday. Mushroom soup is a favorite of mine and good thing there are lot of instant brands that I could buy whenever I am craving for mushroom soup. But yesterday, I wanted something different. I experimented and came up with this recipe which I really, really liked.
For this recipe, you will need:
1. Cheese
2. Onions
3. Cream of mushroom/instant mushroom soup
4. Potatoes
Oops, you also need some butter :)
First, peel your potatoes. Next, cut them into cubes or if you wand, you can dice them. I wanted my chowder to be chunky with bits of potatoes so I just roughly cubed my potatoes. In a pot, place some water then boil your potatoes until tender. Set your potatoes aside.
Get some water, about a cup, then add some cream of mushroom powder. Mix thoroughly until free of lumps. Set this aside.
In a pan, melt some butter then add your onions. Saute the onions until translucent.
Slowly add the potatoes to your butter and onions, and under very low heat, mash the potatoes using the back of a fork or if you have a masher, use that. Incorporate the onions while mashing to add flavor to your potatoes.
Next, add the cream of mushroom slurry. You may add more water and more powder depending on how thick or thin you want your chowder. You will also notice that the potatoes will make the soup become thicker and richer.
Next, add some cheese :) Do not add too much though as this would make your chowder salty. Just add a little bit. I think Parmesan would also be great for this recipe. You can also add mushroom slices if you want. Bring the mixture to a boil, then turn off the heat. You're chowder is now cooked ;)
Now all you have to do is to serve and enjoy this super yummy recipe. I love how it tastes like a mash-up of, well, mushroom soup and mashed potato. I think that's the best description I can give. I partnered this with some garlic bread. This I think would also work great with fried chicken or pork chops :)
