Shakey's Mojos Copy Cat Recipe

Good day dear readers!  I'm sharing with you today a simple fast food recipe that you could easily do at home.  Shakey's is not only famous for their pizza but also for mojos.  I cannot go to Shakey's without ordering mojos.  It love it so much.  In fact, I think they're the best thing Shakey's has, even better than their pizza :)  So, because it's rainy and I have been craving for mojos, I decided to make me some.  This recipe was an experiment but it turned out really, really good.Shakey's Mojos Copy Cat Recipe



For this recipe, we will need the following ingredients:
1.  Potatoes
2.  All-purpose flour
3.  Cooking oil
4.  Store-bought breading mix
5.  Chili and paprika
Oh, we'll need some water too!

Let's start!  First, get your taters then wash them thoroughly to get rid of dirt on the skin.  I left the skin on for this recipe so I had to make sure that it is really clean.  I scrubbed it thoroughly with a clean/unused Scotch Brite.  Next, slice the potatoes crosswise about 1/4 of an inch thick.  Wash it again to remove extra starch then let it air dry.

Next, in a clean bowl, place 1/4 cup water then add some of the breading mix and the spices.  I used chili and paprika.  You can also add cracked black pepper if you like.  Just mix until there are no lumps and set aside.

Next, place you sliced potatoes on a microwave-safe container then put it in the microwave.  Zap it in high for 2-5 minutes depending on how many potatoes you are using.  Since I am using just three medium-sized potatoes, I timed it for 5 minutes at high.  It should take probably 1.5 minutes for each potato.  The potatoes should not be soggy but still a bit firm/half cooked when they come out of the microwave.  This is how mine looked like after placing it on the microwave.  Because the breading browns easily, , microwaving the potatoes ensures that each slice is thoroughly cooked when we fry it.

Let the potatoes cool down a bit.  While you're waiting for them to cool, get three plates.  One plate you will place the all-purpose flour, the second one you will place our store-bought breading mix, and the third and larger one you will place our breaded potatoes.  First, get a slice, the very thinly coat it with all purpose flour.  Make sure that you tap off any excess flour.  This would make our "batter" stick to our potatoes better.

Next, get our water + breading + spices mixture.  Dip the potatoes in this mixture.  If you like you can use eggs if you want your mojos extra crunchy.

Lastly, dump the potato in our store-bought breading mix.  If you do not want to use store-bought mixes, you can make your own.  Just mix flour, onion powder, garlic powder, salt or powdered bullion cube, and black pepper.  I used the store-bought mix because it is much more convenient.  You can use any brand you want for this recipe.

Next, place it in a plate and let it rest.  You can store this in your fridge to fry later or just let it sit for a while.  This step makes our "batter" and breading mix stick better to the potatoes.  Make sure each potato slice is completely covered and there are no wet spots.

Now all you've to do is fry these basis.  Heat oil in a sauce pan, about 1 inch deep.  Check the oil if it hot by sprinkling a bit of flour.  If it sizzles, it's ready.  Place the potatoes in about 5 or 6 pieces a batch to not only cook the potatoes quickly but evenly giving each potato enough space to move around the pan.  Fry until golden brown.  Make sure to drain off excess oil.

Your mojos are ready to serve!  Dipped them in tomato ketchup and I'm in mojo heaven!  I love how this recipe turned out.  They are pretty close to the original mojos from Shakey's.  Best thing about cooking fast food at home, you get to have them in large quantities at a fraction of a cost plus you know exactly what you are getting because you know every ingredient you put into it :)

  5. OMG, mojos! I love them too, possibly more than the pizzas at Shakey's. I always get them with Zesty Ceasar dip, but that can also be bought at the store for the complete mojos experience at home. ^_^
