Good morning dearies! Because mango is in season, we will be making this super delicious and cheap recipe you can try for breakfast or merienda (snack). I love using fruits in season because not only are they at their freshest and sweetest but they are also ridiculously cheap. Pancakes are a staple in our household because it is easy to prepare. I love eating it with ice cream because who doesn't love anything with ice cream on top, right, especially for me who got taste buds of a 6-year-old!
For this recipe, you will need the following:
1. Ripe mangoes
2. Chocolate ice cream
3. Water
4. Olive oil
5. Whole wheat pancake mix
6. Egg
First, prepare the batter by mixing oil, water, pancake mix, and egg. I used premeasured pancake mix so I just followed the directions on the box. You can also make it from scratch if you want. Make sure to mix it well to get rid of lumps.
In a nonstick pan brushed with a bit of oil, cook your pancakes. You can cook it as thin or as thick as you want, it is up to you.
Once the pancake is cooked, place it on a plate and let it cool down a bit. Putting the ice cream when the pancake is uber hot will definitely melt it.
Get your mangoes and cut it in slices. Place them at the middle of your pancake. You can put more mangoes if you want.
Next, roll the pancake as you would a pancake wrap or a burrito ;)
Add the ice cream on top of your rolled pancake. You can use other flavors of ice cream, but I think chocolate works best for this recipe. You can use double dutch or rocky road or other chocolate-based ice cream. You can also use plain chocolate then add toppings like nuts and mallows.
Drizzle the pancake with honey. You can also use maple syrup or chocolate sauce for this. You can customize the recipe according to your preference :)
Now dig in and enjoy! I love the sweetness of the mangoes, the fluffiness of the pancake, and the creaminess of the ice cream, perfect combination! :) Yum!
