Strawberry Mango Crepe Cake

Good day darlings! How did your weekend go?  It was Mother's Day last Sunday.  How did you celebrate this special day with mom?  Ours was pretty simple.  We just bought her some flowers and I made this recipe for her.  It's super easy to make and I'm telling you, this would definitely impress the one you would give this to.

For this recipe, you will need the following:
1.  A cup of hotcake mix
2.  Two tablespoons of  melted butter
3.  1/3 of a block of cream cheese
4.  A cup of water
5.  A tablespoon of jam of strawberry jam
6.  Two eggs
7.  A table spoon of powdered sugar
Oopps! I almost forgot, you will need fresh mangoes too! :)

Okay, let's start!  Get a medium sized bowl then mix the melted butter, eggs, and water.  Whisk until well incorporated.

For this recipe, I am using hotcake mix because it is much easier, but if it is not available in your area, you can always use your favorite pancake recipe or this to make your batter.

Mix until your batter is free of lumps.  This will ensure you'd have super smooth crepes.  Make sure your all ingredients are homogeneously combined. :)

Next, we need to add some color to our crepes!  This is the fun part.  You can try different colors, just one or two colors or even make a rainbow colored one.  If you decide to make just one color like I did, just add a few drops of food color then mix.  If you're going for the more adventurous route, you will need to equally divide the mixture then separately add colors of your choice.  After doing this, you will need to refrigerate this for one hour.  I am not sure what exactly this does but it helps in making perfect crepes every time, so cover your mixture with a plastic wrap and let it sit in the fridge to cool.

Once you one hour is up, get your mixture then it's time to cook!  Heat your nonstick pan then brush or spray with a little butter or cooking oil.  Pour in a bit of the mixture then swirl it around.  Your crepe should be thin, about a sixth of an inch or thinner.  Once the batter is spread around the pan, wait for the surface to be dry and then flip to cook the other side.  Remember to cook on low heat.

This is what your crepe should look like.  Let it cool down.  If you have a drying rack, put it there.  Repeat the steps until batter is all cooked.  For this recipe, I've made seven crepes about 6 inches in diameter.

Next, while waiting for your crepes to cool down, you can now make the spread/filling.  You can just use whipping cream for this recipe, but since it was Mother's Day, I wanted to make it extra special.  Mix sugar, jam, and cream cheese in a separate bowl until well combined.  I love cream cheese for this recipe because it is super creamy and with the addition of a bit of sugar and a bit of jam, it's just perfect, tangy and not too sweet.

Once done mixing, spread the filling to your crepe then layer put another crepe on top of it.  Layer until all your crepes are stacked.

Time to decorate our cake!  Slice some fresh mangoes then top it with a bit of our filling and strawberry jam.  Cover with plastic wrap then let it chill in the fridge for at least 30 minutes until the crepes absorb our filling.
